🧨 I’ve made these for everything from our July 4th bash to several of our legendary Chicken Wing-Palooza birthday parties—and they always disappear fast. People constantly ask, “Robin, what’s in these? How did you make them?” So here we are.

💥 What Makes These Middle Eastern Spiced Wings Stand Out?

- Seasoned with a bold spice mix that includes sumac, garlic, and thyme
And when that sumac hits the heat? It turns a deep, almost plum-red color with citrusy aroma that makes your kitchen smell like a spice market. This isn’t your average buffalo wing situation.
🌶 That Color Isn’t Burnt – It’s Flavor!
When my brother and his wife saw these wings, they noticed that beautiful, blackened look—like they had just come off the grill. That rich color came from sumac roasting to perfection. Every bite was crispy, juicy, and full of vibrant spice. Mid-bite, they both stopped and said, “Wait… what IS this??”
I just smiled and said, “That’s sumac—a Middle Eastern spice made from dark red berries.”

- Chicken wings
- Brown sugar + sumac + garlic powder+ onion powder+ paprika + thyme
- Salt, pepper, oil

💡 Tips for Crispy Sumac Chicken Wings
- Don’t skip the rack! It helps the hot air circulate so you get crispy edges.
- Dry = Crispy: Moisture is the enemy—really dry those wings before seasoning.
- Don’t overcrowd the pan or they’ll steam instead of crisp.
- For extra punch, add a pinch of cayenne to the rub.
- Leftovers? Reheat in a 375°F oven for 10 minutes—good as new.
- Not freezer-friendly, but totally fridge-friendly for a couple of days.
🍗 Air Fryer Directions for Dry Rub Wings
- Preheat the air fryer to 375°F (190°C) for 3–5 minutes.
- Pat wings dry, then toss with oil and your dry rub spice mix until evenly coated.
- Arrange wings in a single layer in the basket—don’t overcrowd. Cook in batches if needed.
- Air fry for 24–28 minutes, flipping the wings halfway through, until the skin is crispy and cooked through (internal temp should be 165°F).

Vibrant Sumac Blackened Chicken Wings

Method
- Preheat oven to 400 F degrees. Line a large baking sheet with foil and top with an oven safe cooling rack sprayed with non-stick cooking spray and set aside. *(For air fryer instructions, please refer to the full blog post.)
- Add brown sugar, sumac, onion, garlic, paprika, thyme salt and pepper to a bowl and combine well.
- Pat the wings dry with a paper towel. Toss the chicken wings with the oil and seasonings until well-coated.
- Arrange the seasoned chicken wings in a single layer on the prepared wire rack and bake for 35-45 minutes. If you're not using a rack, flip the wings halfway through to ensure even crisping.
- Garnish the wings with chopped parsley and serve with lemon wedges and dipping sauce, such as ranch or lemon tahini sauce.
Notes
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 1 clove garlic, finely chopped or minced
- 1 teaspoon honey
- 2 tablespoons warm water (you can add more if it’s too thick)
- A pinch of salt
- A little pepper (if you like it)

Mix the sauce
In a small bowl, stir together:- Tahini
- Lemon juice
- Garlic
- Honey

Add water slowly
Pour in the warm water a little at a time.
Keep stirring until it’s smooth and creamy. -
Season it
Add a pinch of salt and a little pepper.
Taste it—add more if you want! -
Time to dip!
Use it with chicken wings or veggies. Yum!
Tip: If the sauce is too thick, just add a bit more warm water.
