For the Salad
- Baby arugula (or baby spinach for a milder flavor)
- Persian cucumbers (or English cucumbers)
- Baby heirloom or cherry tomatoes
- Red onion (thinly sliced)
- Fresh parsley & mint (chopped)
- black cured olives or Kalamata (Mina cured olives work really good here)
- Toasted walnuts (or almonds/pistachios)
- Feta cheese
For the Citrus Garlic Vinaigrette
- Extra virgin olive oil
- Fresh lemon juice
- Orange zest
- Garlic (minced)
- Aleppo pepper (or red pepper flakes)
- Salt and black pepper

Step-by-Step | How to Make It
- Start with the greens.
Add fresh arugula to your bowl or platter. - Add the good stuff.
Top with cucumbers, tomatoes, red onion, olives, chopped herbs, and toasted walnuts. - Add the feta.
Crumble it generously over the top. - Make the vinaigrette.

- In a large bowl, combine arugula, cucumbers, tomatoes, red onion, parsley, mint, olives, and walnuts. Place feta cheese on top and set aside.
- Use a small food processor or blender. Add olive oil, lemon juice, garlic, Aleppo pepper, orange zest, a small pinch of salt, and black pepper. Blend until smooth, then taste and adjust seasoning as needed.
- Pour some or all of the dressing over the salad. Toss everything together well, then enjoy!
Notes
- Use about 3.5 to 4 oz of arugula instead of the full 5 oz.
- This makes the salad more balanced, with better flavor and just the right amount of dressing.
