September has arrived, and while it still feels like summer, I’m already anticipating the cooler temperatures ahead. Who else is excited for the change in seasons?
This week, I’m thrilled to share a versatile salad dressing that brings a touch of Mediterranean flair to your kitchen. It’s not your typical Greek or ranch dressing, but a delightful fusion of both. Inspired by the talented Clare DeBoer, this healthy dressing recipe features a base of creamy feta, strained yogurt, fragrant dill, and garlic. It combines the briny brightness of the Mediterranean with the creamy richness of ranch. It’s light enough to drizzle generously over crisp vegetables, yet hearty enough to turn a simple salad into a complete meal.
Greek Ranch Dressing

This lush, tangy dressing is perfect for both dipping and tossing with your favorite vegetables. The pronounced lemon flavor gives it a zesty kick, but you can adjust the amount of zest to suit your taste. I love the brightness of a full lemon, but if you prefer a milder taste, feel free to use less. The key to perfecting this dressing is balancing the consistency and flavor by tasting as you go. Crisp vegetables might need a bit more dressing, while watery ones will contribute their own juices, so adjust with more olive oil or yogurt as needed. Aim for a light, even coating, and enjoy the salad immediately.
As a result of making this Greek Ranch Dressing, I created three delicious recipes that showcase its versatility. Each dish highlights fresh, peak-season ingredients from the farmer’s market, offering vibrant colors, textures, and flavors that celebrate the late summer harvest. Here’s how I used the dressing:



1. Crisp Greek Ranch Corn Salad
This refreshing salad is a celebration of late summer produce. Steamed corn, fresh off the cob and retaining its sweet crunch, mingles with crisp cucumbers, juicy cherry tomatoes, chickpeas for protein, and thinly sliced onions. Tossed in the tangy Greek Ranch Dressing, this salad becomes a satisfying vegetarian option or a versatile side dish. The combination of briny feta, creamy yogurt, and zesty lemon perfectly complements the sweet corn and fresh vegetables, making every bite a burst of flavor. Serve this salad with grilled chicken for a delightful meal, and don’t forget a side of sweet, juicy watermelon—the perfect companion to feta cheese.
2. Lamb Meatball Pita with Greek Ranch Dressing
For a hearty, Mediterranean-inspired meal, I used the Greek Ranch Dressing as a flavorful spread in a Lamb Meatball Pita. Juicy, spiced lamb meatballs are nestled into warm pita bread, along with a vibrant mix of crunchy cucumbers, sweet cherry tomatoes, chickpeas and tangy onions (from the Crisp Greek Ranch Corn Salad mixture minus the corn). The dressing adds a creamy, tangy layer that ties all the flavors together, making each bite a savory delight. The lamb’s rich, robust flavor pairs beautifully with the bright, fresh vegetables, creating a balanced and satisfying sandwich. 3. Crispy Chicken Pita with Greek Ranch Dressing
For a quick and convenient twist on the classic pita sandwich, I used crispy fried chicken tenders from my grocery store deli. The result is a delightful contrast between the crunchy, golden chicken and the cool, creamy Greek Ranch Dressing. Like the lamb version, this sandwich is loaded with crisp cucumbers, juicy tomatoes, chickpeas, and thinly sliced onions (from the Crisp Greek Ranch Corn Salad mixture minus the corn), all wrapped up in soft pita bread. The dressing’s zesty lemon and dill notes cut through the richness of the fried chicken, creating a harmonious balance of flavors. Enjoy this pita with a side of watermelon, as the sweetness of the fruit plays off the savory notes of the chicken and feta.

- Adjust salt and lemon to your preference. If the dressing is too thick, add a spoonful of yogurt or a swirl of olive oil to achieve the right consistency.

- Steam the Corn: Slice the corn kernels off the cobs using a knife. Place the kernels in a steamer and steam for 5 minutes, until cooked but still crisp and slightly poppy. If you don’t have a steamer, create one by placing a colander in a saucepan of boiling water, then cover with a lid. Allow the corn to cool completely before proceeding.
- Assemble the Salad: Once the corn has cooled and dried, combine it with the cucumbers, chickpeas, cherry tomatoes, onions, and Greek Ranch Dressing. Taste and adjust the seasoning with salt and lemon if needed.
- Adjust Consistency: If the salad feels too thick or gloopy, add an extra spoonful of yogurt or a swirl of olive oil to achieve a smoother consistency.
