This recipe started with a simple request from my husband. He wanted blueberry pancakes. Something light, healthy, and not too fussy. So, I reached for a few pantry staples—bananas, oats, eggs, milk, and blueberries—and tossed them into the blender. That was it.
These pancakes are adapted from a recipe by Shanthi Appelö, MS, RD, a registered dietitian and wellness spokesperson for Blue Cross Blue Shield of Michigan. I love how her recipe uses wholesome, dog-safe ingredients (like oats) and skips anything artificial or unnecessary.
Not exactly a shock—James T. will eat almost anything —but these pancakes got some serious tail wags. Turns out they’re not only perfect for a cozy breakfast for two, but totally safe to share with your dog. No baking powder, no baking soda—just real, whole ingredients.

- Combine all ingredients EXEPT lemon zest and blueberries in blender. Add blueberries to the batter and stir.
- Heat a nonstick pan over medium heat and spray with oil or a dab of coconut oil.
- Pour 1/3 cup of pancake mixture into pan and let cook or 2-3 minutes or until golden brown, flip and cook for 1 minute on the other side. Top with lemon zest if using.
- Serve with fresh cut fruit and a dollop of Greek yogurt.
