Quick & Flavorful Creamed Corn

Ingredients
  

  • 3 cups sweet corn kernels, frozen or fresh (if fresh, from about 4 ears)
  • 2 cups water
  • ¼ cup heavy cream
  • 6 Tbsp sugar
  • 1 tsp salt, plus more to taste
  • 1 Tbsp unsalted butter
  • Black pepper, to taste

Method
 

  1. In a medium saucepan, combine the corn, water, sugar, and salt, and bring to a boil. Simmer until the corn is soft and cooked through, 5 to 6 minutes. Drain and add about half the corn to a blender with the cream and butter. Puree just briefly, until partly smooth, 10 to 20 seconds. Stir the puree and remaining corn kernels together in a bowl, and season with salt and pepper. Serve immediately.
