- Rosemary Citrus Cacao Nib Shortbread:

4-Ingredient Buttery Shortbread Cookies

- Position a rack in the center of the oven and preheat to 300℉. Coat an 8 x 8-inch baking pan with cooking spray or brush with butter. Line the pan with two crossed strips of parchment paper that hang over the sides for easy removal from the pan in one large square after cooling. (See notes)
- In a large bowl, combine the flour, powdered sugar, and salt and whisk until smooth and no lumps remain in the sugar.
- Add the melted butter and stir with a spatula until just combined and no streaks of flour remain.
- Transfer the shortbread dough to the prepared pan and press it into an even layer with your hands or a flat-bottomed measuring cup.
- Bake the shortbread until golden brown and crisp, 40 to 50 minutes.
- Let the shortbread cool in the pan, then use the parchment paper to lift the shortbread out of the pan and cut into squares or use your hands to break the shortbread into pieces. Store in an airtight container at room temperature for up to 1 week.

Looks great. I always use my Mom’s recipe, which is butter, sugar, and flour. I’ve seen other recipes with powdered sugar instead. I’ll try this sometime.
I’ve used WW pastry flour, lemon extract or juice and chopped pistachios, I’ve tried sliced almonds and coconut…and others and it always turns out great.
