Happy December everyone! When my husband came home from a red-eye flight with a cold and I woke up with a froggy throat, I knew we needed something soothing yet revitalizing. Enter this Ginger Lemon Spritz, adapted from In Bibi’s Kitchen by Hawa Hassan and Julia Turshen. It’s a recipe rooted in Madagascar’s culinary traditions, where fresh, bold ingredients are transformed into something both comforting and invigorating.
This spritz quickly became our go-to, whether served chilled over ice for a refreshing pick-me-up or warmed up for a cozy remedy. It’s not just a drink; it’s a year-round lifesaver.
I recently shared the flavorful Digaag Qumbe, Somali Chicken Stew from this same East African cookbook, and now I’m excited to share this vibrant drink from Madagascar with you folks!
What You’ll Need
- Fresh ginger root (2 inches): For a spicy kick and health-boosting antioxidants.
- Lemon juice (freshly squeezed): Bright and tangy, packed with vitamin C.
- Honey: A natural sweetener with soothing, antimicrobial properties.
- Water: Helps balance and blend the concentrate.
- Optional additions: Sparkling water, sparkling wine, or hot water for serving.

How to Make It
- Blend: Combine ginger, lemon juice, honey, and water in a blender. Blend until smooth to create a powerful concentrate.
- Strain: Pour the mixture through a fine mesh sieve into a pitcher, pressing with a spoon to extract every last drop of ginger goodness. Discard the solids.
- Mix and Enjoy:
- Refreshing Option: Mix the concentrate with sparkling water or sparkling wine over ice.
- Warm, Soothing Tea: Heat a cup of water until very warm. Stir in your desired amount of concentrate to create a comforting tea (skip the sparkling water for this version).
- Store the concentrate in its original form to preserve its versatility. For added convenience, you can freeze it in ice cube trays—perfect for portioning out just the right amount for your next refreshing drink or warm, soothing tea.
How to Serve It
- Chilled: Perfect for a summer pick-me-up or when you need a fizzy, refreshing boost.
- Warm: Ideal for cozying up on a cold day or soothing a scratchy throat.
- Make it special: Serve in decorative glasses or mugs to elevate the experience.

Kitchen Tools You’ll Need
- Blender: To create the ginger-honey-lemon base.
- Citrus juicer
- Fine mesh sieve or nut sacks: For straining the concentrate.
- Pitcher or mason jar: To store your mixture in the fridge.
- Paring knife. To cut the lemons.
- Stanley Cup: The perfect companion for taking your favorite drink to work.
How to Store It
Store the concentrate in a sealed container in the fridge for up to a week. This makes it easy to have on hand for whenever you need a quick boost.

Inspired by Madagascar’s culinary traditions, this drink celebrates simple, pure ingredients that deliver both comfort and energy. Ingredients
Equipment
Method
- Place the ginger and water in the jar of a blender and puree until smooth.
- Add lemon juice and honey and puree until smooth again.
- Pour the concentrated mixture through a fine-mesh sieve into a pitcher, pressing down to extract all the ginger flavor. Discard the solids, then stir in the seltzer, sparkling mineral water, or sparkling wine in a decorative pitcher. Serve immediately.
Notes
- I prefer using Meyer lemons, which are in season from winter to early spring and have a sweeter, more fragrant flavor. However, any fresh or organic lemon will work just as well.
- This recipe is ginger-forward. For a more lemon-forward flavor, reduce the amount of ginger and increase the amount of lemon to suit your preference.
- You can substitute agave or your preferred sweetener for honey, though keep in mind that honey offers unique medicinal benefits.

This is a good drink to boost immunity. I usually put some turmeric also.
Thank you so much, Beverley! I love the idea of using fresh, vibrant orange turmeric in this drink. I recently came across turmeric so fresh and brilliantly colored that it was almost as sweet as a carrot, with none of the usual bitterness—it was a delightful surprise!
