Chocolate Rocky Road Cookies

Think of the best brownie cookie ever—now double the flavor and fun, and that’s what these Chocolate Rocky Road Cookies deliver! With a soft, brownie-like texture, they’re incredibly customizable. A classic mix-in combo includes pretzels, chocolate chips, and mini marshmallows, but feel free to get creative with pantry staples like potato chips, dried fruit, or nuts.

What Makes These Cookies Special

These cookies have a rich, soft, slightly chewy base that’s reminiscent of a brownie. The mix-ins turn them into a party-in-a-cookie. While rocky road flavors like marshmallows and pretzels are a classic option, any sweet, salty, or crunchy ingredient can be used.

Easy Cookie Dough Method

The dough uses a simple one-pan technique, much like brownies. Melt butter, whisk in sugar and natural cocoa powder (not Dutch process), then finish the batter and add the mix-ins. No electric mixer needed, and cleanup is easy!

Use a non-stick medium saucepan for this one pot recipe.

Mix-In Inspiration

About 1 ½ cups of mix-ins work best, yielding around 16 generously sized cookies. Here are some ideas:

  • Lightly crushed potato chips
  • Salted peanuts, cashews, or almonds (chopped)
  • Toasted pecans or walnuts
  • Mini marshmallows
  • Pretzels (chopped if large)
  • Dried cherries or apricots
  • Chocolate chips or chopped chocolate
  • Teddy Grahams for a fun twist

Make-Ahead Tips

For mix-ins like pretzels or potato chips, these cookies are best enjoyed within a day or two to preserve their crunch. Store in an airtight container at room temperature.

Scooping the Dough

A 2-tablespoon cookie scoop is ideal for these cookies, or simply roll two tablespoons of dough into a ball by hand. Use 2 half sheet pans lined with a silicone mat or parchment paper.

Chocolate Rocky Road Cookies

These brownie-like cookies are all about fun—packed with your favorite mix-ins for a party in every bite! Made in one pan for super easy prep and cleanup, they’re the ultimate customizable treat that’ll have you ready to celebrate with every batch.

Ingredients
  

  • 8 Tbsp (4 ounces) unsalted butter, cut into 4 pieces
  • ¾ cup granulated sugar  (5¼ oz)
  • cup  unsweetened, natural cocoa powder (not Dutch-processed) (1 ounce) 
  • 1⅓ cup unbleached all-purpose flour (6 ounces)
  • ½ tsp baking soda
  • ¼ tsp table salt
  • 1 large egg
  • 1 tsp pure vanilla extract
  • cups mix-ins, lightly packed, plus more for garnish (choose from the options below)
  • Flaky sea salt (optional)

Method
 

  1. Put the butter in a medium saucepan and set over medium-low heat, stirring occasionally, until it is melted, about 2 minutes. Slide the pan off the heat, add the sugar and cocoa powder and whisk until blended. Set aside to cool while the oven heats (about 15 minutes).
  2. Position a rack in the center of the oven and heat the oven to 350°F. Have ready 2 cookie sheets lined with parchment or non-stick liners. Whisk the flour, baking soda and salt in a small bowl until well blended.
  3. After 15 minutes, add the egg and vanilla to the chocolate mixture and whisk until well blended. Add the flour mixture and stir with a spatula until blended. Add the mix-ins and stir until just combined.
  4. Using a 2-tablespoon-sized scoop, portion out the dough and place each scoop about 2 inches apart on the prepared cookie sheets. Gently press down on each dough mound to flatten it to about 1/2-inch thick. If desired, sprinkle a little flaky sea salt on top for an extra touch of flavor.
  5. Bake until the cookies are puffed and the tops are cracked and no longer wet, 8 to 9 minutes. Move the cookie sheet to a rack to cool for about 5 minutes, then transfer the cookies from the sheet to a rack until cooled.

Notes

Mix-Ins: Choose up to 3 (or 5 like me if you can’t make up your mind) for a total 1 ½ cups.

 

  • Hearty potato chips (I like Lays Wavy, lightly crushed)
  • Lightly salted peanuts or cashews (coarsely chopped)
  • Almonds, pecans or walnuts (toasted and coarsely chopped)
  • Salted tiny pretzels (coarsely chopped if using larger ones)
  • Dried cherries or chopped dried apricots
  • Mini Teddy Grahams (any flavor and coarsely chopped)
  • Chocolate chips or chopped chocolate (any flavor)
  • Mini marshmallows (snipped if using the standard size)
  • Optional (but delicious) garnish with Maldon Sea Salt Flakes.
