Ingredients
  

  • 8 Tbsp unsalted butter (1 stick/113 grams)
  • all-purpose flour (300 grams)
  • 4 tsp baking powder
  • 1.5 tsp kosher salt (While the original recipe suggests using 2 teaspoons, I’ve adapted it slightly to my preference by using 1½ teaspoons instead.)
  • 1 Tbsp granulated sugar
  • 2 cups well-shaken whole fat buttermilk (480 milliliters) (If whole-fat buttermilk isn’t available, use any buttermilk you can find, or consider making your own as an alternative. See notes.)

Equipment

  • 9-inch cast-iron skillet or 9-inchsquare baking dish

Method
 

  1. Adjust the oven rack to the middle position and preheat to 450°F. Place the butter in a 9×9-inch casserole dish or cast-iron skillet. When the oven reaches 300°F, put the dish or skillet inside to melt the butter. (Avoid adding butter at the start of preheating, as it may burn or even catch fire if left too long.)
  2. Place the flour, salt, baking powder and sugar in a large bowl and whisk to combine. Add the buttermilk and stir gently with a spatula just until combined. Do not overmix.
  3. Remove the hot dish from the oven and gently pour the batter over the melted butter. Use a knife or spatula to spread the dough evenly in the skillet.
  4. Run a knife through the dough, “cutting” it into 3-inch squares right in the skillet.
  5. Bake for 20 to 25 minutes, rotating the pan once halfway through, until the tops of the biscuits are golden brown. Serve immediately.

Storage: The biscuits are best warm out of the oven. Store for up to 3 days in a container at room temperature or in the freezer for up to 2 months, and reheat in the oven or toaster oven until warmed through.
 
The best full fat homemade buttermilk for butter swim biscuits: Blend 1 cup of whole milk and 1 cup of heavy cream. Add 2 tablespoons of lemon juice or white vinegar, let it sit for 10 minutes, and give it a good stir. Your rich buttermilk is ready.
