Hearty Halloween Chili for Hungry Trick-or-Treaters: The Best Chili Tradition

Hi everyone! Every Halloween, I break out my trusty cauldron (okay, it’s just a big pot) and cook up a huge batch of chili. When the temperature drops, there’s nothing like a bowl of chili to warm you up from the inside out! This dish not only grounds everyone after the candy-fueled sugar highs, but it also wraps up the crisp, cool air of fall in one hearty, protein-packed bowl. If you’ve ever watched a costume-clad crowd flock to your house on a chilly night, you know that this chili is a savory tradition worth sharing!

What You’ll Need for the Best Halloween Chili

A great chili doesn’t need fancy ingredients, just a little patience and a few pantry staples. This recipe’s magic lies in its simplicity: you’ll create a deeply rich flavor from slowly caramelizing onions and bell peppers until they’re sticky and sweet, making a luscious, jammy base. As it simmers, the comforting blend of smoky paprika, cumin, and a touch of balsamic vinegar fills the kitchen with an irresistible warmth. Perfect for the cool fall air, this chili is the ultimate cozy meal to enjoy in the chillier months. And here’s a Halloween tip: chili is best made in big batches, so you’ll be set for the whole family with some left over for quick winter warm-ups!

Thick, bold, and bursting with flavor—this Halloween chili is the ultimate cozy, meaty masterpiece!

Why This Chili is a Halloween Staple

What makes this chili such a Halloween classic in our house? First, it’s the depth of flavor. Slowly cooking those onions and bell peppers brings out a natural sweetness that balances perfectly with the smoky spices and rich beef. My husband, who’s tasted chili all over the world, swears this one’s the best—and that’s saying something! With no chunky tomatoes (a big plus for him), it’s incredibly smooth and still packed with all the flavor you could ask for. It’s also loaded with protein, so it keeps everyone full and happy, which is just what you need when the nights turn crisp. This chili is mostly hands-off once it’s on the stove, letting you greet the trick-or-treaters while your house fills with the comforting aroma of spices and rosemary.

Halloween Chili Serving Ideas

The best part? This chili is incredibly versatile for chilly fall or winter nights. My personal favorite is to serve it with Butter Swim Biscuits—they’re fluffy, buttery, and perfect for dunking (recipe coming soon). Or, if you want a Halloween color theme, serve it alongside roasted sweet potatoes for that beautiful pop of orange. It’s as comforting as it is festive!

Add a little extra flair by topping each bowl with:

  • Grated cheddar or Monterey Jack cheese for gooey, melty richness
  • A dollop of sour cream or Greek yogurt for a creamy contrast
  • Freshly chopped green onions or cilantro for brightness
  • Sliced avocado for smooth, buttery texture
  • A sprinkle of crushed tortilla chips for a satisfying crunch

Bringing Halloween Tradition into the Kitchen

There’s just something so fitting about a pot of chili on Halloween night. When the air is crisp and the house is filled with the rich, smoky aroma of spices, it feels like Halloween has truly arrived. This warm, hearty bowl of chili not only calms everyone after trick-or-treating but also fills them up with a cozy, protein-rich meal that’s as good in winter as it is on Halloween. And honestly, it’s a treat for me, too—a tradition that’s brimming with memories, comfort, and all the best flavors of fall.

This remarkable chili recipe owes a nod to Chef Clare DeBoer, whose masterful touch inspired this rich, slow-simmered chili—taking a classic and elevating it with layers of flavor worthy of the season’s chill.

Hearty Halloween Chili for Hungry Trick-or-Treaters: The Best Chili Tradition

This is the ultimate chili—a bold, flavor-packed blend of tender beef, sweet peppers, and hearty beans, simmered to perfection with aromatic spices and fresh rosemary. Cozy, rich, and undeniably the best chili you’ll ever taste!
Prep Time 10 minutes
Cook Time 2 hours 15 minutes
Servings: 6
Course: Dinner
Cuisine: American

Ingredients

  • 6 Tbsp olive oil
  • 1½ (700g) lbs yellow or white onion, diced (about 5 medium onions)
  • 2 (900g) lbs red bell peppers, diced
  • 1-2 Tbsp kosher salt *1 to 2 tablespoons, to taste (The original recipe suggests 2 tablespoons, which adds a bold, savory saltiness. If you like it less salty, try starting with 1 to 1.5 tablespoons—my husband and I prefer this range. Remember, you can always add a bit more at the end, but you can’t take it back once it’s in!)
  • 8 garlic cloves, minced
  • 1 Tbsp ground cumin
  • 1 Tbsp sweet paprika
  • 1 Tbsp smoked paprika
  • 3 bay leaves
  • 1 fresh chili (optional)
  • 2 lbs. lean ground beef (I used 90/10)
  • 2 (15 ounce) cans beans of your choice, drained and rinsed (I have used pinto and cannellini.)
  • balsamic vinegar, to taste
  • 1 spring rosemary

Equipment

  • 1 large pot or Dutch oven

Method

  1. Pour 4 tablespoons of olive oil into a heavy-bottomed pot, then add the onions, peppers, and salt. Sweat over medium heat with the lid on until everything is soft and wet, about 20 minutes. Then remove the lid, turn up the heat, and cook, stirring regularly, until the vegetables become sticky and sweet, about 20 more minutes. Don’t rush this.
  2. Nudge the veg to one side of the pot, add two tablespoons of olive oil to the cleared space, and then add the garlic, cumin, both paprikas, bay leaf, and chili. Let this bubble in the oil until the garlic becomes sticky, about 2 minutes, before stirring it through the onions and peppers.
  3. Add the beef, breaking it up with a spoon and combining it with the base. Stir and cook until the beef turns gray, about 10 minutes. Add 3 cups, 750 milliliters of water to the pot, and simmer over medium heat until the beef is completely tender and gleaming with a layer of paprika-stained tallow, about 90 minutes.
  4. Add the beans and just enough water to re-incorporate the separated fat and make the chili sloppy, 1/4-1/2 cup. Continue to simmer until the beans taste like they were cooked with everything else, about 5-*20 minutes. (see note)
  5. Season with a dash of balsamic vinegar and bruise and bury the sprig of rosemary in the chili. Taste and smile.

Notes

For beans with a thicker skin, like kidney beans, continue to simmer for an additional 10 or so minutes. For beans with a thinner skin, such as pinto or cannellini beans, simmer for an additional 5 minutes, taking care to stir gently. This will help preserve the beans’ texture, preventing them from breaking down too much.

I love using an enameled cast-iron Dutch oven for this recipe. Any large pot will do!
