Quick & Easy Weeknight Asparagus

Among all the elaborate recipes we’ve tried, this effortless method remains unmatched in its deliciousness.

Tips for Buying and Storing Asparagus
Choose fresh asparagus with smooth skin, unspoiled tips, and firm, upright spears.
Trim the ends, cutting off no more than an inch.
Stand upright in water in a glass measuring cup, mason jar, or bowl, ensuring the tips are covered.
Avoid packing too tightly; use multiple containers if necessary.
Cover with a plastic bag to retain moisture and prevent wrinkling and sliminess.
Store in the refrigerator and check daily, refreshing the water if it becomes cloudy or evaporates.

Quick & Easy Weeknight Asparagus

This springtime asparagus offers a delightful tenderness and flavor, accentuated by its fragrant and savory profile. The simplicity and speed of preparation enhance its deliciousness, making it a perfect choice for any weeknight meal.

Ingredients
  

  • 1 lb asparagus, woody ends trimmed
  • 2 Tbsp vegetable oil or other neutral oil
  • ½ tsp salt, or to taste
  • ¼ tsp black pepper, or to taste
  • 3 to 4 Tbsp chicken broth (or vegetable broth as a vegan alternative)

Method
 

  1. Slice the asparagus into 2-inch pieces and set aside. In a large wok or skillet, heat hte oil over high until shimmering. Add the asparagus – it should sizzle nice and loud – and season generously with salt and pepper. Toss the asparagus with a spatula until it is well coated in oil and gets a bit of sear on some sides. It doesn't need to be browned but should begin to become fragrant after 30 seconds or so.
  2. Reduce the heat to medium-low and add the chicken broth. Cover and let steam until the asparagus is tender, about 10 minutes.

Notes

I usually make 2 lbs. if entertaining more than 4 people.
