Quick & Easy Weeknight Asparagus

This springtime asparagus offers a delightful tenderness and flavor, accentuated by its fragrant and savory profile. The simplicity and speed of preparation enhance its deliciousness, making it a perfect choice for any weeknight meal.
Course: Side Dish
Cuisine: American

Ingredients

  • 1 lb asparagus, woody ends trimmed
  • 2 Tbsp vegetable oil or other neutral oil
  • ½ tsp salt, or to taste
  • ¼ tsp black pepper, or to taste
  • 3 to 4 Tbsp chicken broth (or vegetable broth as a vegan alternative)

Method

  1. Slice the asparagus into 2-inch pieces and set aside. In a large wok or skillet, heat hte oil over high until shimmering. Add the asparagus - it should sizzle nice and loud - and season generously with salt and pepper. Toss the asparagus with a spatula until it is well coated in oil and gets a bit of sear on some sides. It doesn't need to be browned but should begin to become fragrant after 30 seconds or so.
  2. Reduce the heat to medium-low and add the chicken broth. Cover and let steam until the asparagus is tender, about 10 minutes.

Notes

I usually make 2 lbs. if entertaining more than 4 people.
