Fried Plantains & Onions

Ingredients
  

  • 1 Large sweet onion
  • 1 11 oz. package frozen fried plantains (Found in my grocery store's frozen food section. Goya brand is best.)
  • 2 Tbs Vegetable oil for frying (Any neutral oil)
  • salt and pepper to taste

Method
 

  1. Peel and slice the onion in half. Slice into half-moon slices, not too thin or they will disintegrate and get stringy.
  2. Microwave frozen plantains according to package directions.
  3. Heat oil in a skillet or wok over medium to medium-high heat. Sauté the onions for 3-4 minutes until they become translucent.
  4. Once the plantains are finished in the microwave, add them to the onions in the skillet. Season with a bit salt, and pepper, or your preferred seasonings. Continue to sauté for an additional 2-3 minutes, or until reaching your desired level of doneness.

Notes

Common Spices to Elevate Flavor:
    • Cinnamon: Sprinkle a pinch of cinnamon on top of fried plantains for a delightful hint of sweetness and warmth.
    • Nutmeg: Freshly grated nutmeg adds subtle earthiness and a slightly nutty flavor.
    • Spicy red pepper flakes or cayenne. 
    • Coconut flakes sprinkled on top as a garnish.
I have yet to experiment with ghee or coconut oil in this dish. While these oils may impart a different flavor profile, they could potentially elevate the dish in new and interesting ways.
