Easy Brazilian Grilled Pineapple

Ingredients
  

  • 1 cup brown sugar
  • 2 tsp ground cinnamon
  • 1 pineapple, peeled, cored, and cut into 6 wedges (If you purchase a freshly peeled and cored pineapple, slice it into six rings.)
  • pinch of salt
  • vanilla ice cream, for serving (optional)
  • fresh mint leaves, for garnish (optional)

Method
 

  1. Fire up the barbecue on medium-high heat. Lightly oil the grate.
  2. In a small bowl, combine brown sugar, ground cinnamon, and a pinch of salt to create the cinnamon sugar glaze.
  3. Transfer the mixture into a large resealable plastic bag. Add the pineapple wedges and thoroughly coat them with the sugar mixture.
  4. Grill the pineapple wedges on the preheated grill until heated through, about 4 to 5 minutes per side.
  5. Remove the grilled pineapple from the barbecue and transfer to a serving plate.
  6. Serve hot, either on their own or topped with a scoop of vanilla ice cream for an indulgent treat.
  7. Garnish with fresh mint leaves for a pop of color and freshness.

Notes

Alternative Cooking Method:
No grill? It's a blizzard outside? Bake it in a covered baking dish at 400 F for about 30 minutes. Broil for the last 5 minutes to achieve slightly charred edges. The juice ends up being soaked up and provides AMAZING flavor.
