Easy Raspberry Chocolate Cobbler: Soft, bubbly raspberries hidden beneath a crispy, fudgy chocolate layer. A decadent, gooey Valentine's dessert that's sweet, tart, and irresistible.

Ingredients
  

For the raspberries:
  • 1 10 oz package frozen raspberries (no need to defrost) (I purchased from Whole Foods.)
  • ¼ cup sugar
  • Juice of half a lemon
  • 1 Tbsp cornstarch
  •  Pinch of kosher salt
For the topping:
  • 1 (125g) cup all-purpose flour
  • ½ cup sugar, plus a tablespoon for sprinkling
  • cup unsweetened cocoa powder (natural or Dutch-processed both work) (Choose a cocoa you have on hand.)
  • ½ tsp baking powder 
  • ½ tsp baking soda 
  • Pinch of kosher salt
  • 2 large eggs
  • 1 cup heavy cream (Plus more if making your own whipped cream. *See note below.)
  • 1 cup semisweet chocolate chips (Use regular-sized chocolate chips, as you want them to melt.)

Equipment

  • 9- to 9-1/2-inch deep-dish pie pan
  • baking sheet (Optional but better safe than sorry.)

Method
 

  1. Preheat your oven to 375ºF. 
  2. First, prepare the raspberry layer: Place the raspberries in a 9-inch pie dish (or any oven-safe dish). Let them sit for a few minutes, then break them up into bits. Add sugar, lemon juice, cornstarch, and salt, and mix well.
    It may look unpromising, but it will turn out just right.
  3. Next, make the topping: Whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl. Add the eggs and heavy cream and stir well to combine. Stir in the chocolate chips. The batter will be thick.
  4. Spread the topping evenly over the raspberries. Sprinkle the tablespoon of sugar evenly on top.
  5. Bake until the topping is set and firm to the touch, the raspberries are bubbling, and the kitchen smells wonderfully chocolatey, about 50 minutes. Start checking for doneness at 40 minutes, as cooking times may vary.
  6. Allow the cobbler to cool for at least 10 minutes, then serve warm.

Notes

Here’s a quick guide to make perfectly sweetened vanilla whipped cream:
1. Chill Your Equipment: Place a mixing bowl and whisk or beaters in the fridge for about 15 minutes.
2. Measure: Pour 1 cup of heavy whipping cream into the chilled bowl. Add 1 Tbsp. powdered sugar and 1 tsp pure vanilla extract and a pinch of salt.
3. Whisk: Use a hand mixer or stand mixer on medium-high speed to beat the cream until it forms soft peaks.
4. Achieve Stiff Peaks: Keep whisking until stiff peaks form. Be careful not to over-whisk, or you might end up with butter!
