- Silken Tofu – For that custard-like texture that blends perfectly with the pumpkin. It makes the mousse thick and creamy without any dairy.
- Pumpkin Puree – Use 100% pure canned pumpkin. Be sure to skip the pumpkin pie filling!
- Maple Syrup – For just the right amount of natural sweetness.
- Spices – A warm, cozy blend of cinnamon, ginger, cloves, and nutmeg to give it that familiar pumpkin pie flavor. A pinch of salt helps bring it all together!
Optional Add-ins:

- Line a colander with some paper towels (or a clean dish towel). Place the tofu on top and then cover with a few moe paper towels. Place a pot or heavy dish on top of the towel-lined tofu and allow to site for 15 minutes to drain. This is a super easy way to squish out excess water from your tofu.
- Place tofu, pumpkin puree, maple syrup, and spices into a food processor.
- Blend until everything is well incorporated and the pumpkin tofu mixture is rich and creamy. Transfer to an airtight container and place in the fridge for a minimum of 4 hours to chill and set.
- Spoon ½ cup of the mousse into a serving dish and top with a dollop of whipped cream or topping of choice. Enjoy!
