Ingredients
  

  • 1 cup 100% pumpkin puree
  • ¼ cup peanut butter (no xylitol)
  • ¼ cup Greek yogurt
  • 2½ cups old-fashioned oats plus ½ cup for rolling

Method
 

  1. In a medium-sized bowl, mix the pumpkin, peanut butter, and Greek yogurt with a spoon until smooth. Alternatively, use an immersion blender or a hand mixer.
  2. Add 2½ cups oats and incorporate well.
  3. Using an ice cream scoop or spoon, form into about 1-inch balls. Roll in about ½ cup of oats to coat.
  4. Refrigerate until firm, about 1 hour.
