Ingredients
  

  • 1 lb lean ground beef (90/10)
  • 1 tsp sea salt
  • ¼ tsp fresh ground black pepper
  • 8 oz Romaine lettuce, chopped
  • 1 cup tomatoes, sliced or chopped
  • ¼ cup purple or red onion, sliced
  • ¼-½ cup shredded cheese
  • ½ cup dill pickles , diced
Dressing:
  • ¼ cup plain yogurt
  • 2 tsp yellow mustard
  • 3 tsp ketchup
  • 2 Tbsp pickle juice
  • 1 tsp white vinegar
  • ½ tsp smoked paprika

Method
 

  1. Cook ground beef in a medium skillet over medium-high heat with salt and pepper until caramelized for max flavor. Add olive oil if needed. Stir occasionally for 8-10 mins until beef is browned and moisture evaporates. Before finishing, turn off heat and sprinkle shredded cheese, letting it melt for 30 secs.
  2. Whisk all dressing ingredients together. Adjust flavors to taste.
  3. In a large bowl, combine the lettuce, tomatoes, onion and pickles.
  4. Add the cheesy ground beef. Drizzle the dressing over the salad. Toss to coat and enjoy!
