The Good Stuff Without the Drive-Thru

Hi folks! Three-Ingredient Taco-Spiced Grilled Chicken is the kind of recipe that makes lunch or dinner feel possible when everyone is hungry and the drive-thru is starting to look a little too convenient.

This started with Whole Foods 365 Organic Mild Taco Seasoning on discount, so I grabbed a few packets thinking: wings or breasts? I went with chicken breasts because they are more flexible. Wings are wings, and we love them, but grilled chicken can become taco bowls, wraps, soft tacos, salads, or whatever my husband decides to build from the leftovers.

The basic idea is beautifully simple: chicken, good olive oil, and a taco seasoning packet you actually like. That is it. You can use chicken thighs or chicken breasts, depending on what your family prefers. If using breasts, I like to butterfly or pound them so they cook more evenly. If using bone-in chicken, plan on a longer cook time and check the temperature.

Serve the chicken whole or sliced, then let everyone build their own taco-flavored thingy. It might be a taco bowl with rice, beans, cheese, avocado, lime, and jalapeños, a warm wrap, or a big crunchy salad with tomatoes and grilled vegetables. Kids like choosing their own toppings, and honestly, so do grown-ups.

The recipe is also easily doubled for families, and leftovers are a yes-please situation. This chicken is so flavorful and versatile that no one complains about seeing it again.

The Grilled Vegetables Are Just a Bonus

The grilled vegetables are here to spark ideas for whatever taco-flavored thingy you want to build. I used zucchini, fresh corn, red and yellow bell peppers, and one onion, cut into large chunks or strips so they were easy to handle on the grill. For the onion, keep the root end attached and slice it into fourths so the pieces hold together. Drizzle everything with olive oil, season with salt and pepper, and grill until tender and lightly charred, about 15 minutes. My husband cut the kernels off the corn cob and added them to his taco bowl, which was exactly the right move.

Big pieces of zucchini, corn, peppers, and onion hit the grill first because they take a little longer than the chicken. Then they are ready for bowls, wraps, salads, or whatever taco-flavored thingy happens next.

A Few Helpful Notes

Use a taco seasoning packet you trust. I like the Whole Foods 365 Organic Mild packet because the flavor is good and the salt level works for me. It lists 470 mg sodium per serving, and one full packet works well for about 2 pounds of chicken, so I do not add extra salt. I would avoid packets that go much higher in sodium, especially if you are adding salty toppings later. Simply Organic is a good lower-sodium option, with about 270 mg sodium per serving, so you can add a little salt after grilling if the chicken needs it.

Wipe off thick seasoning clumps before grilling so they do not burn. Then drizzle the chicken with a little more olive oil before it hits the hot grill.

No Grill? No Problem

You can cook this chicken under the broiler or in a grill pan/skillet. Broil about 4 to 5 minutes per side, depending on thickness. For a skillet, cook over medium-high heat until browned on both sides and cooked through. Chicken breasts, thighs, and bone-in pieces all cook at different speeds, so use an instant-read thermometer and make sure the chicken reaches 165°F in the thickest part.

Ingredients
  

  • 2 pounds boneless, skinless chicken thighs or chicken breasts; if using breasts, butterfly or pound them to an even thickness
  • 1 packet (1 ounce) taco seasoning, see notes for sodium guidance
  • 3 tablespoons olive oil, plus more for drizzling before grilling

Method
 

  1. Marinate the chicken: Place the chicken in a large bowl. Sprinkle with the taco seasoning and drizzle with 3 tablespoons olive oil. Toss until evenly coated. Cover and refrigerate for 1 to 48 hours. If you are short on time, you can grill the chicken right away.
  2. Preheat the grill: Heat the grill on high for about 20 minutes. You want it very hot, about 475°F to 525°F. Clean the grates, then adjust the heat as needed to prevent flare-ups.
  3. Prep before grilling: Before the chicken goes on the grill, wipe off any thick, caked-on seasoning clumps so they do not burn. Drizzle the chicken with a little extra olive oil to help prevent sticking.
  4. Grill the chicken: Place the chicken on the hot grates, cover, and grill for about 4 minutes per side, or until cooked through. Thicker pieces, larger thighs, or bone-in chicken will take longer.
  5. Check and rest: Use an instant-read thermometer to make sure the chicken reaches 165°F in the thickest part. Transfer to a plate and let rest for at least 5 minutes before serving whole or sliced.

Notes

Taco Seasoning: I use 365 by Whole Foods Market Organic Mild Taco Seasoning, which lists 470 mg sodium per serving and works well for about 2 pounds of chicken. I do not add extra salt. Simply Organic is a good lower-sodium option, with about 270 mg sodium per serving, so taste after grilling before adding salt. Choose a packet you like and watch the sodium, since toppings can add more salt later.
Chicken: Boneless, skinless thighs or breasts both work. If using breasts, butterfly or pound them to an even thickness so they cook more evenly. Bone-in chicken may also be used, but it will take longer to cook.
Grilling Tip: After marinating, wipe off any thick, caked-on seasoning clumps so they do not burn on the grill. Drizzle the chicken with a little extra olive oil before grilling to help prevent sticking. If your grill tends to stick, gently lift or nudge the chicken after about 1 minute, then set it right back down and let it keep cooking.
No Grill: Broil the chicken about 4 to 5 minutes per side, depending on thickness, or cook it in a grill pan/skillet over medium-high heat until browned on both sides and cooked through. Always use an instant-read thermometer and cook chicken to 165°F in the thickest part.
