Ingredients
  

This recipe can be effortlessly scaled to accommodate larger portions, whether doubling or tripling the ingredients.
  • 9 oz cheese tortellini, refrigerated (I used the Rana brand, conveniently located in the refrigerated section of most grocery stores.)
  • 1 Tbsp olive oil
  • 3 cloves garlic minced
  • ½ tsp Italian seasoning
  • ¼ tsp crushed red pepper flakes
  • 1 cup  vegetable or chicken stock
  • ½ cup sun-dried tomatoes
  • ½ cup heavy cream
  • ½ cup finely grated parmesan cheese
  • 1 Tbsp sliced fresh basil leaves

Method
 

  1. Cook tortellini according to package directions.
  2. Meanwhile, heat a large skillet over medium heat. Add the oil and once hot add the garlic, Italian seasoning, and red pepper flakes. Stir continuously for 30 seconds.
  3. Add the stock, sun-dried tomatoes, and heavy cream to the skillet. Stir to combine and bring to a simmer. Allow to simmer on low for 15 minutes, stirring occasionally.
  4. Stir in the parmesan and cooked tortellini. Top with the basil and serve immediately.

Notes

Because I used unsalted homemade stock, I added 1/2 tsp. of salt to the stock to enhance the flavor.
