Crisp Cabbage, Carrot, and Apple Salad

I’m totally into this healthy take on classic slaw! The mix of cabbage, carrot, and apple in this salad is just irresistible. And that zesty lemon kick with the crisp apple slices? Crisp Cabbage, Carrot and Apple Salad

A simple, healthy salad of grated carrots and sliced apples and cabbage tossed with fresh lemon juice, and olive oil.

Ingredients
  

  • ¼ head green cabbage, thinly sliced
  • 1 medium carrot, peeled and grated
  • 3 green onions (or 5 chives), finely chopped (I used the green parts of the green onions instead of chives since there were none in the fridge.)
  • 1 lemon, juiced
  • 1 apple, cored and thinly sliced into strips
  • 1 Tbsp sea salt
  • black pepper to taste
  • extra virgin olive oil, for drizzling
  • 1-2 tsp honey (optional to cut tartness of the lemon)

Method
 

  1. Chop and thinly slice or shred the cabbage
  2. Peel and grate 1 carrot using the large holes of a box grater.
  3. Finely chop 5 chives or 3 green onions.
  4. Halve a lemon and squeeze all the juice into a small bowl.
  5. Quarter the apple, remove the core, and slice it into thin strips.
  6. Combine the chopped abbage, grated carrot, chopped chives (or green onion) and sliced apple in a large bowl.
  7. Sprinkle 1 tablespoon of salt over the mixture. Add black pepper to taste.
  8. Drizzle a small amount of olive oil over the salad.
  9. Mix the ingredients well until evenly combined.
  10. Serve the salad on a plate and enjoy!

Notes

Freshly sliced vegetables are often preferred over pre-sliced and packaged options for their superior taste and nutrient content. While fresh produce maintains its quality and flavor, pre-sliced varieties can sometimes fall short in comparison. However, in situations where convenience is paramount, pre-sliced vegetables can certainly suffice.
